<p>對於<a href="https://www.lsf-tw.com/">螺螄粉</a>,喜歡的朋友,沉迷其中不可自拔,討厭的人,卻恨不得掩鼻逃竄。螺螄粉是廣西壯族自治區柳州市特色小吃,起源於二十世紀八十年代,具有酸、辣、鮮、爽、燙的獨特風味,屬桂菜。</p> <p>其吃法多樣,常見的主要有:煮螺螄粉、干撈螺螄粉、炒螺螄粉。其中,煮螺螄粉被視為正宗<a href="https://www.lsf-tw.com/">柳州螺螄粉</a>。</p> <p><img src="https://www.lsf-tw.com/wp-content/uploads/2023/08/c191a89d5547ce0836a9f846c9d68221.webp" alt="此图片的alt属性为空;文件名为c191a89d5547ce0836a9f846c9d68221.webp" /></p> <p>雖然烹飪方式不一,但在製作過程中,都用到了螺螄,米粉,蘿蔔乾,腐竹,筍乾,辣椒油,天然香料等螺螄粉標誌性原料。螺螄粉的湯由螺螄熬成的,因而得名。</p> <p>螺螄粉為什麼聞著臭吃著香?它到底健不健康?網上流傳一碗螺螄粉等於七碗米飯是真的嗎?以及最重要的,減肥的人能不能吃螺螄粉?</p> <p>今天,小編就和大家聊聊你們最愛吃的螺螄粉。</p> <p><strong>1.</strong>螺螄粉為什麼聞著臭吃著香?</p> <p>很多人認為螺螄粉的臭味來自螺螄,但其實並不是,螺螄粉之所以臭,是因為裡面有酸筍。</p> <p>酸筍是用嫩竹筍泡在水裡發酵得到的,含有對甲基苯酚和乙酸,高純度的乙酸有一股子臭腳丫子的酸爽,也就是螺螄粉的「臭味」。</p> <p>不過,對螺螄粉老饕來說,臭味十足的酸筍才是螺螄粉的精髓。「沒有酸筍,螺螄粉就沒了靈魂」(不喜歡臭味的小夥伴可以不放酸筍)</p> <p>為什麼螺螄粉聞著臭,吃著香呢?這裡要聊到兩個概念,鼻前嗅覺和鼻後嗅覺。</p> <p>人類的舌頭只能感受酸甜苦咸鮮五個基本維度,而鼻腔內的感受器更加豐富,能幫我們識別更複雜的氣味和味道。</p> <p>換句話說,不靠鼻子,人吃啥都沒味兒,而螺螄粉聞著臭,就是鼻前嗅覺的體驗。</p> <p>在我們吃螺螄粉的時候,氣味分子會不斷從後往前流溢,充滿鼻腔,然後從前面排出去,這就是鼻後嗅覺。</p> <p>後者由於溫度、咀嚼和酶的化學反應,我們又能感受到螺螄粉濃郁獨特的香味,所以就有了聞著臭,吃著香的特殊體驗。</p> <p><strong>2.</strong><a href="https://www.lsf-tw.com/">螺獅粉</a>健康嗎?</p> <p>雖然在口味上倍受好評,但是在健康問題上螺螄粉就有些一言難盡,高鈉高油高熱量是螺螄粉的原罪。</p> <p>隨便扒一份螺螄粉的營養成分表,鈉含量超標,長期鈉含量超標,除了容易引起身體水腫、皮膚乾燥外,還可能導致高血壓、心血管疾病等多種慢性病。</p> <p>再說螺螄粉的熱量,網傳一碗螺螄粉等於7碗米飯,這到底是不是真的?</p> <p>一份白米飯約110大卡,一份螺螄粉的熱量確實相當於7碗左右的白米飯。</p> <p>所以,減肥的朋友,還是盡量不要吃。</p> <p>另外,別看螺螄粉配料包裡面似乎葷素都有營養均衡,但整體蔬菜、肉類還是嚴重缺少。長期吃的話,容易導致營養不良。</p> <p><strong>3.</strong>如何吃<a href="https://www.lsf-tw.com/">螺絲粉</a>才健康</p> <p>螺螄粉雖然沒那麼健康,但真要戒掉的話,小編也做不到......</p> <p>所以,想要健康又減脂的吃螺螄粉,需要做一些改良。</p> <p><strong>1</strong>、少吃幾口粉,多加兩份肉針對碳水比例太高,蛋白質、膳食纖維、優質脂肪不足問題,我們可以選擇只吃1/3的粉,再加兩份肉,比如2顆滷蛋+1個雞腿,或1個鹵豬腳+3/4隻大蝦。</p> <p><strong>2</strong>、少喝兩口湯,多吃幾口菜針對鈉過量易水腫問題,少喝兩口湯,再搭配些易燙軟且好入口的新鮮蔬菜。這樣不僅增加了膳食纖維,還可以有效降低水腫的可能。像生菜、油麥菜和番茄這高鉀低鈉的新鮮蔬菜,都是不錯的選擇。</p> <p><strong>3</strong>、享受完美食後,記得多喝水吃完記得大量喝水。增強新陳代謝,尤其是鹽分和油脂的代謝。</p> <p><strong>4</strong>、運動起來,想吃得爽又不想長胖?那當然是運動起來了。</p>
